Gluten Free Breaded Coconut Shrimp

Have you been seeking breaded foods lately? Well, seek no longer! This Gluten Free Breaded Coconut Shrimp recipe will curb those cravings and will taste great too. It’s made with flours that you already have in your kitchen. Also, if you’re not a fan of raw shrimp, you can buy the precooked frozen ones at your grocery store for greater convenience. Get cooking!

Ingredients:

  • 25-30 medium cooked, deveined shrimp, tails removed
  • 2 Parts coconut flour
  • 1 Part tapioca starch or arrowroot starch
  • 1 Rounded tsp sugar
  • 1 Egg
  • 2/3 Cup of Milk
  • Avocado oil for coating pan

Directions:

  1. Place a coating of oil in a pan and heat to medium.
  2. Beat milk and egg together in a bowl using  fork or whisk.
  3. Mix tapioca starch, coconut flour, and sugar together in a separate bowl.
  4. Dip shrimp in egg mixture and then roll in the flour mixture.
  5. Place shrimp in a skillet with oil in pan.
  6. Brown on both sides, turn down heat to low, then continue browning until desired color is reached and the shrimp look crispy.
  7. Drain them on paper towels to remove excess oil. Blot them if necessary.
  8. Serve with your favorite fruits and vegetables with noodles or rice.
  9. Add salt, pepper, or seasoning to taste. Enjoy!
